So I've given up smoking, actually I haven't given up anything but, as Allen Carr said, I simply QUIT. It's been now nearly 3 months since my last cigarette, and unfortunately I tend to quickly forget the benefits gained by this decision, instead I focus on the fact that I've gained around 5/7 KG, and that makes me doubt about my choice. Anyway I'm not planning to start again but now after 3 months I've developed a persistent cough with a tick brownish phlegm: I was warned that this is a normal symptom when you quit but I was expecting to develop it in the first month.
Thank god we are having the famous "Irish summer" in here, that means 2/3 weeks of decent weather, but that also means air conditioning pumping on your back like there's no tomorrow. And was with great disgust that I probably identified the culprit of my cough: I was looking up in the ceiling in my workplace and this is why I decided to title this post "we breath cancer"

Pizzaiola of Quorn Fillets
I love Quorn. I know that is OGM and it is not really and completely vegetarian (it contains eggs) but I love its texture and flavour and I think it is a valid alternative to chicken.
So here the recipe:
2 pack of Quorn Fillets
1 KG of cherry tomatoes
2 Vegetable stock cubes
2 Spoon of capers
With this dosage you will get 12 fillets: just use the half of it if you just want 6!!!
So here we have our fillets:
Fry them in a bit of oil until golden brown
Cut the cherry tomatoes in 4 parts:
Add them to the pan with a bit of oil 1 stock cube and the capers:
After 5/8 minutes they should look like this:
Add again your fillets and cook everything for another 5 minutes: you will notice that the tomato sauce will be slightly absorbed by the quorn fillets
Buon appetito!!

Mediterranean spring rolls
So here I continue my experimenting with filo pastry
3 Big onions
5 Tesco Vegetarian sausages
2 Mozzarella
1 Pack of feta cheese
1 Pack of ricotta
500 gr of Cherry Tomatoes
15/20 Filo pastry sheet
Finely chop the onions and fry them in a pan with a bit of oil.
Add the sausages chopped in chunks, and cook everything until golden brown.
When ready take the pan away from the hob and add the ricotta, the mozzarella,the feta and the tomatoes chopped in cubes.
Put a bit of filling into 1 sheet, close the external borders of the pastry in the inside of the filling and roll it up.
Fry the spring rolls into a bit of oil until lightly brown
Buon appetito!!
