Peperonata with soya chunks

Ingredients
8/10 Peppers
2 Aubergines
4 Courgette
2/3 Onions
4/5 Tomatoes
2 Vegetable stock cubes
100 gr of soya chunks

Peperonata is one of the easiest and helthy dishes anybody can cook: it can be eaten cold during summer or hot in those bluesy winter days.
You will need a big pot for this because of the amount of vegetables that we are going to use.
Cook the soya chunks in the pot as described here
Cut the peppers,onions,aubergines,tomatoes and courgette in big chunks and add them to the pot with the stock cube left.



Cover the pot and cook on low flame for about 1 hour or until the vegetables get soft
