Today's post is dedicated to the quiche. This recipe really depend on your taste since you can virtually fill the quiche with anything!
Here is what I used:
3 Big onions
5 Tesco Vegetarian sausages
1 Mozzarella
1 Pack of feta cheese
1 Pack of ricotta
150 ml of fresh cream
1 Vegetable stock cube
2 Puff pastry sheet
Finely chop the onions and fry them in a pan with a bit of oil.
Add the sausages chopped in chunks, the stock cube and cook everything until golden brown.
When ready take the pan away from the hob and add the ricotta and the fresh cream: you should get a nice and creamy mixture.
Finally add the mozzarella and feta chopped in cubes.
Add the first puff pastry sheet as a base of a round tin making sure that it follow the shape of it, add the mixture and cover it with the second pastry sheet rounding the corners to close it.
Put in the oven at 200 for about 40 minutes or until golden brown.
This can be eaten cold or warm.
P.S. I tried an experiment (as seen in the pictures) using filo pastry instead of puff pastry: I still prefer the original method since with the filo pastry it's too crunchy
